However, his true culinary identity emerged upon returning to Peru and immersing himself in its diverse regions, guided by a philosophy based on “levels and altitudes.” This philosophy is the foundation of Central, his Lima restaurant. At Central, he crafts a 16-course Alturas Mater tasting menu, taking diners through 15 distinct Peruvian ecosystems categorized by altitude. This culinary exploration spans from 20 meters below sea level to 4,100 meters, showcasing native ingredients, many unknown to the public. It’s a testament to Martinez’s culinary artistry. (Buenos Aires, 1969) has a background of more than 25 years in the audiovisual sector, as a producer, director or creator of television formats. In Spain he developed the formats of Caiga quien Caiga, El Rayo and Trip. From his production company GlamoramaTV, he has developed content for several television channels in Spain and Argentina. He is the founder of the House of Chef, a platform following gastronomic trends through shorts, series and feature films telling stories related to cuisine. In 2018 he presented Tegui: Un asunto de familia (Tegui: a family affair), his first feature film, in Culinary Zinema, the section to which he returned in 2019 with La leyenda de Don Julio: Corazón & Hueso (The Legend of Don Julio: Meat & Bones). With Purity (2020) he received the Audience Award at Malaga Festival.
